By many standards, salmon is considered a super food. It's vitamin-rich, nutrient-dense and provides the body with healthy fats that lower cholesterol and promote heart health. There are many easy and delicious ways to prepare salmon so you can enjoy it regularly. Use these recipes to incorporate salmon into your diet regularly while enjoying different flavors.
Lemon Butter Salmon and Ravioli
Prepare the ravioli in water per the package directions. Squeeze the fresh lemon over the salmon fillets and cook them in a pan with the olive oil over medium heat. Turn after four minutes and cook for another four minutes, making sure the salmon flakes. Remove the salmon and place on top of the cooked ravioli on a plate. Add the spinach leaves to the pan and saute for one minute until wilted. Arrange around the salmon. Saute the garlic cloves and butter in the pan for two minutes before pouring over the dish. Serves two.
Salmon Burgers
Mix all ingredients together in a bowl until combined well. Form patties with your hands. Heat vegetable oil in a pan over medium heat. Cook the salmon burger patties for four to five minutes per side. Serve on a bun with your favorite condiments.
Salmon Salad
Toss the first five ingredients together in a large salad bowl. Mix the olive oil, lemon juice, sugar, salt and capers together to make the salad dressing. Drizzle over the salmon salad ingredients. Toss lightly to mix the dressing throughout. Serve with a crusty French or Italian bread.
Easy Baked Salmon
Combine all ingredients except for the salmon fillets to make a marinade. Place the salmon fillets in the marinade and allow them to sit in the refrigerate for one to two hours. Preheat the oven to 375 degrees Fahrenheit. Remove the salmon fillets from the marinade and place on aluminum foil in a glass casserole dish. Brush the fillets with marinade and close the foil around the salmon. Bake about 35 to 45 minutes, until fork-tender.
Broiled Salmon with Bourbon-Maple Glaze
Mix the first four ingredients together in a small pot over medium heat. Cook the salmon in the broiler for 5 minutes on each side, brushing each side with the bourbon-maple glaze once. Bring the remaining glaze to a boil. Pour over the broiled salmon and top with the nuts.
