Spice blends you may enjoy making for your own use.
I have made a list of seasoning mixes that are easy to make and easier to use. This holds true for not only the experienced cook but also the new cook. So please enjoy these recipes.

Cajun Spice Blend:
2 Tbsp Cumin 2 Tbsp Coriander 2 Tbsp Paprika
1 ½ tsp salt 1 ½ tsp black pepper Cayenne pepper to taste
1 Tbsp Oregano
Mix well and put in air tight container.
Use it on meats and other items your cooking.

Greek Spice Blend:
1 Tbsp Garlic powder 1 Tbsp Basil (dry) 1 Tbsp Oregano (dry)
1 ½ tsp Salt 1 ½ tsp black pepper 1 1/ tsp Parsley (dry)
1 ½ tsp Rosemary (dry) 1 ½ tsp Thyme (dry) ¾ tsp Nutmeg (dry)
Mix together and put in air tight container.
Good on meats and vegetables or sprinkle on salad.

Mediterranean Mix:
3 Tbsp Rosemary (dry) 2 Tbsp Cumin (ground)
2 Tbsp Coriander (ground) 1 Tbsp Oregano (dry)
2 tsp cinnamon (ground) ½ tsp salt
Mix and store in air tight container.

Italian Seasoning Blend:
½ cup Basil leaf ½ cup marjoram leaf
½ cup Oregano leaf ¼ cup Rosemary leaf (cut and sifted)
¼ cup Thyme leaf
Put in jar and shake well. Good for the auto-immune system
This blend is also good when put on a roast.

Poultry Seasoning:
2 Tbsp Marjoram (dry) 2 Tbsp Savory (dry)
2 tsp Parsley (dry) 1 Tbsp Sage (dry)
1 ½ tsp Thyme (dry) 1 pinch Rosemary (dry)
1 pinch Onion Powder
Mix together or you can make a powder by grinding it.



Chili Seasoning:
1 Tbsp Chili powder 1 tsp Cumin (ground)
¼ tsp Cayenne (ground) ¼ tsp Garlic powder
½ tsp Onion powder 1 tsp Salt
¼ tsp Pepper (black)
Mix well, can be used for more then just chili.

Incredible Seasoning Salt:
30 oz Sea Salt (fine grind) 1 Tbsp Mace (ground)
1 Tbsp Dill salt 1 Tbsp Curry powder
1 Tbsp Onion salt 1 Tbsp Mustard powder
2 Tbsp Celery salt 1 Tbsp Garlic salt
2 Tbsp Paprika (sweet) 4 Tbsp Pepper (ground)
4 Tbsp Sugar
Mix half salt and other ingredients thoroughly, Add remaining salt and mix again.
Has multiple uses.

Curry Powder Mixture:
8 Tbsp Cumin Powder 7 Tbsp Coriander Powder
2 Tbsp Ginger Powder 4 Tbsp Tumeric Powder
½ Tbsp Cayenne Pepper
Combine and store in air tight container.

Chinese 5 Spice
2 Tbsp Anise Seed 2 Tbsp Fennel Seed
2 Tbsp Cinnamon (ground) 2 Tbsp Cloves Whole
2 Tbsp Peppercorns
Grind ingredients til a fine powder.

Herbs de Provence:
1 Tbsp Thyme 1 tsp Marjoram
½ tsp Oregano 1 Tbsp Chervil
½ tsp Mint 1 Tbsp Rosemary
2 Bay leaf (chopped) 1 Tbsp Summer Savory
1 tsp Lavendar 1 tsp Taragon
Mix and store in air tight container.
Excellent on Pot Roast

Pumpkin Pie Spice:
4 tsp Cinnamon (ground) 2 tsp Ginger (ground)
1 tsp Nutmeg (ground) 1 tsp Allspice (ground)
Mix together.

Apple Pie Spice:
4 tsp cinnamon (ground) 2 tsp Nutmeg (ground)
1 tsp Allspice (ground)
Mix together.


Dry Rib Rub:
1 cup Sugar 1 cup Dry Mustard Powder
1 cup Ground Tumeric
Mix together and rub on ribs before bbqing.

Like popcorn then you might like to try this seasoning.
Dill Pickle Popcorn Seasoning:
1 Tbsp Coriander seed (ground) 1 Tbsp Kosher Salt
1 ½ tsp Dill Weed ½ tsp Mustard Seed (ground)
½ tsp Garlic Powder ¾ tsp Dill Seed (ground)
½ tsp Citric Acid
Grind into a powder. Sprinkle on your popcorn for a different taste.

These are easy make mixes that can save you time or if you want to give as gifts to friends they are a nice change for the tie and sweater sets.
You can make these in any amount you wish, according to how much you use on a regular basis.

Has anyone tried this for popcorn. I have some popcorn that doesn't pop very well in my air popper. I read that soaking it for three days then popping it helps.
Go ahead and soak those kernels and then pop them and let us know what the results are.
Don't stuff the turkey with those kernels after soaking them :wink:
Store your kernels in the Fridge, makes for a better pop.
Mom's Banana Nut Bread
This is an original copy of my mom's banana nut bread recipe.
I hope you enjoy it if you try it.

1 3/4 cup flour
1 1/4 tsp baking powder
1/2 tsp baking soda
1/2 cup nuts.
Sift flour and baking powder and baking soda together, add nuts.

2/3 cup sugar
1/3 cup shortening
Cream together and add 2 eggs

Crush 3 bananas
Alternate flour mixture and bananas when adding to creamed shortening,

grease a bread loaf pan.
Preheat oven to 350 degrees, Bake for 55 minutes.
It's an easy recipe and so good with cofffee in the morning.:)
No-Churn Chocolate Ice Cream
1/2 cup +2 tbsp Sweetened Condensed Milk
3 tbsp Unsweet Cocoa Powder
1 cup Whipped Cream

Pour condensed milk in a bowl, sift in half of the cocoa. Stir til combined. Sift in remaining cocoa and whisk til mixed well.
Whip the cream til stiff, transfer whisk full of cream to milk mixture. Whisk until well mixed. Pour rest of milk mixture in cream and whisk til mixed. (Dont over whisk it can break the cream)
Pour into loaf pan and cover with clear wrap. Put in freezer and let freeze for 6 hours or over night.
Makes 2 cups of Ice cream.
I added slivered almonds to mine and it is good.
This is the only thing I know how to cook and it's pretty good, I started making it when I didn't have anything else left in the house LOL...so it is a mistake that it's even good...

One big serving (because I live alone)

1 1/2 cup of shredded frozen hashbrowns (has to shredded)
1 cup of egg beaters
1 1/2 table spoons of Chili (I like Amy's because it's really low sodium and organic).
1 tablespoon olive oil
black pepper to taste.

Put the oil in a 8 inch egg pan Cold
put hash browns in and put plenty of pepper on the and cover turn heat up med. until totally crispy and brown on the bottom
flip them over in one piece. I usually flip them in the pan.. add the egg beaters right over
the crispy hash browns and cover...the top will boil up or become kind of solid..flip it over again and add the Chili and cover until the chili is hot.....It usually slides right out on to a plate...

That recipe sounds a little like some I have made for myself. I just call it a country breakfast because I add meat and veggies at times and cover with cheese, then I sprinkle hot sauce on top and have a hey day with my figure. lol

Magical Coconut Pie

Ingredients:
4 large eggs
2 cups sugar
2 cups milk
1/2 cup sifted all-purpose flour
1/8 tsp. salt
1 1/2 tsp. baking powder
1/2 cup melted margarine
1 tsp. vanilla
2 cups flaked coconut (7 oz. pkg.)

Beat eggs until light, then add and beat in sugar until thick. Add milk gradually as you beat. Sift together flour, salt, and baking powder and beat in. Add margarine, vanilla and coconut and beat into mixture. Butter 2-8 inch pie plates and pour mixture evenly into them. Bake at 350* for 30 minutes., or until set and top is just golden.

Butterscotch Pie

Ingredients:
1 cup dark brown sugar
5 tbsp. flour
1/2 tsp. salt
2 1/2 cups milk
3 slightly beaten eggs (yolks)
1 tsp.vanilla
3 tbsp. butter

Combine sugar, salt and flour in double boiler, stir in cold milk, cook until thickened, stirring constantly. Cover and cook 15 minutes longer. Stir a little of the hot mixture into the egg yolks. Add to remaining mixture in double boiler and cook for 2 minutes longer over hot, not boiling water, stirring constantly, add 3 tbsp. butter and stir cool a bit and add vanilla. Pour into cooked pie shell, cover with meringue and brown in oven.

Blueberry Squares

Ingredients:
1/2 lb. butter
1 cup sugar
1 egg
2 1/2 cups flour
1 1/2 tsp. baking powder
1/2 tsp. salt

Filling:
2 cups blueberries
1/2 cup brown sugar
1 cup water
1 tsp. vanilla
2 tsp. cornstarch

Cream butter, sugar, and egg. Add dry ingredients. Put half of crumbs on bottom of pan. Cook filling of blueberries, brown sugar and water. Dissolve cornstarch in a small amount of cold water and stir in until thick. Put filling over bottom crust and sprinkle with remaining crumbs. Bake until golden brown about 30 minutes at 350*F.

Is that your mama Rural?  She looks too young to be.  I copied all her recipes. They sound so good.  I am going to make that butterscotch pie.
I haven't made pie crust for years but it shouldn't be too hard. 



For the ice cream, does it have to be chocolate? I like carmel or butterscotch.  Can I substitute? How much?

no i am not his mom at all lol we are very good friend and one morning i said good morning boys and he started to call me mom so i call him son. lol
Pie crust easy

Put 6 cups of flour in a bowl. Add a pound of lard (shortening) Mix together then add a can of 7-up or sprite and mix all together really good pie crust if you just want to make one pie divide the rest of the dough for individual pie and freeze in a tight bag. Let me know what you think i make this all the time.
