2-1/2- Cups flour
1/2- Cup Cocoa
2-1/2-Tsp. Baking Powder
1-1/2- Tsp.Baking Soda
1-Tsp.-cinnamon
1-Tsp.Salt
1-Cup chopped nuts(optional)
1- Cup White Sugar
3/4-Cup Butter
3- Eggs
2-Tsp. Vanilla
1/2-cup Milk
1-Cupchocolate Chips
2- Cups grated Zucchini

Combine baking powder, flour cocoa,soda salt, and cinnamon
Set aside.
Beat butter and sugar until fluffy.
Add eggs 1 at a time beat well.
Stir in vanilla and zucchini.
Add: DryIngredients.
Alternately with milk stirring until smooth
Add nuts and chocolate chips.

Pour into greased 10inch tube pan.(And bake at 350 oven)(For 1 hour cool
in pan 15 minutes then remove and frost)

Pepperment Icing
1/3- cup butter
1/2-cup cocoa
1/2-tsp. vanilla
1/4-tsp. peppermint
3- cups icing sugar
3-Tbsp milk
Melt butter in sauce pan, add cocoa stirring until smooth
Add vanilla and peppermint
Blend in icing sugar and milk.

This is a very good cake. (Good luck to any one that makes this cake)

This sounds delicious! I never would have thought of peppermint icing. I'm going to give it a try. :)

I have a glut of courgettes (zuccini) and have no more friends to give them to! Will it freeze?
